I came across a news story this morning from NBC’s Today Show that reported a group within the meat industry is moving toward renaming some of our favorite meat cuts in order to make them “more consumer-friendly.”

The group heading up the new meat monikers is the Uniform Retail Meat Identification Standards—URMIS, for short. They claim that consumers are confused by names of meats like rump roast, pork butt and others. So, to clarify the consumer’s choice of pork and beef, URMIS has suggested new names for more than 350 cuts in your local meat case.

What are some of the new meat monikers you might look for? If you’re planning on serving up a juicy pork chop for dinner, look instead for “Porterhouse chops,” “Ribeye chops” and “New York chops.”

The term "gluten-free" comes up frequently in conversation lately, since many of us have discovered that some of the physical discomfort we may be experiencing after eating stems from what we're eating.

Elisabeth Hasselbeck from ABC's "The View" has written a book, called The G-Free Diet, about her experiences living with Celiac disease, helping to spread awareness about the disease and how it can be treated by changing what one eats.

Gluten is a protein complex found in wheat (including kamut and spelt), barley, rye and triticale, and very negatively affects many people. The American Dietetic Association says that one in 133 people in the U.S. have celiac diesease, and most of them don't know it. It affects children as well as adults, of course.

KC to offer culinary arts degree with classes available at Longview HS

KC to offer culinary arts degree with classes available at Longview HS

Kilgore College, the Longview Economic Development Corporation and the Longview Independent School District are pleased to announce the development of an Associate of Applied Science degree in Culinary Arts at KC.

Working closely with these entities and an advisory committee, KC officials designed curriculum to meet training needs in the Longview area. 

The courses will be taught at the Longview High School commercial kitchen located in the recently expanded Technology Building.

This new degree at KC provides high school students additional opportunity for dual credit courses.  These students will also enjoy a seamless transition into a degree program in culinary arts at KC.

Culinary Arts course offerings will begin the fall semester of 2012 on the campus of Longview High School.  The educational partnership between KC and LHS is twofold in that not only will high school students bene

Friday, September 16, young musician/songwriter Caitlyn Brette will perform at Gilmer's Walking "S" Steakhouse. She'll play at 6:30p.m., so plan to come have dinner while you enjoy the talent of this young artist who has been compared to greats such as Patsy Cline and Leann Rimes!

Caitlyn's Bio:

Caitlyn Brette “Country’s Lil’ Angel” is 12 years old and hailing from Houston, Texas. She started her singing career doing guest spots with some of the Houston area’s local bands. Caitlyn and her father have already written and recorded her own original music which will be included on her soon to be released CD. Caitlyn has been recognized by the Texas Independent Music Society she was included in the Documentary film “Songwriter in the Sky”.
